60 20 20 Cabernet 2011 Zymè
Wine description
The Zymè's 60 20 20 Cabernet is a red wine made of a blend of Cabernet Sauvignon, Cabernet Franc, and Merlot grapes, the numbers 60 20 20 indicate the percentages of the grapes that compose the wine. It comes from the vineyards of Lonigo, in Colli Berici, on soils rich in clay. The label shows decisive lines and self-confident tones, well representing the characters of the wine. Celestino Gaspari, owner and oenologist of the Zymé winery, decided to make his own wine after have been working for Giuseppe Quintarelli for 10 years.
Tasting Notes
Color: red tending to deep purple, it'll turn to garnet while ageing. Scent: wild red berry fruit, blueberry, red currant, wild blackberry, musk and spices Taste: rich, austere, complex and well-balanced, with pronounced tannins. Aromatic impressions of prune marmalade and wild red berry. Long finish, with delicate hints of black pepper, country herbs, and clay.
Vinification
Manual harvesting, between the 3rd decade of September and the 1st of October (Cabernet in 300 Kg bins, Merlot in plateaux). The must ferments with ambient yeasts in concrete vats at controlled temperatures for about 40 days.
Ageing
The wine matures in new oak barrels for a minimum of 30 months, followed by 1 more year in the bottle.
