Wine description
The Zymè's Amarone della Valpolicella is a dry red wine produced with a blend of 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta, 5% Croatina grapes, coming from the vineyard in Negrar di Valpolicella. The grapes for Amarone are grown in the eldest vineyards and the wine is produced only in the best vintages. Celestino Gaspari, owner and oenologist of the Zymé winery, decided to make his own wine after have been working for Giuseppe Quintarelli for 10 years. The Zymè's Amarone is a robust and important wine, it's complex and intense, soft and elegant and its structure makes it suitable for a long time aging.
Tasting Notes
Color: intense ruby red Scent: notes of ripe cherry and semi-dried plum and spices Taste: appealing savouriness, mirroring the fragrances found on the nose and adding fruit preserves notes; with ageing, the palate lengthens, offering delicate impressions of pepper, liquorice and cocoa powder.
Vinification
The grapes are harvested during the 2nd and 3rd decade of September. Minimum 3 months of natural semi-drying of the grapes without artificial methods. The grapes are pressed in January and placed in steel tanks and in concrete vats, without added yeasts. The maceration lasts 2 months.
Ageing
A minimum of 5 years in large Slavonian oval oak barrels.
