Tasting Notes
In the glass we find an opaque orange wine, of great concentration and in constant evolution, with hints of ripe fruit, peach and apricot, candied bergamot, dried fruit and honey, flowers and aromatic herbs. Fresh and tense in the mouth, with a dense and fine tannic texture, it is dry and vibrant, with a full body and enjoyable drinking. Ethereal and mineral, it closes the roundup of emotions leaving a splendid earthy memory.
Vinification
From the best spots and older vines of Ribolla gialla Paraschos select perfectly ripe and healthy bunches, destem them and put in small Cretan clay amphorae, where they spontaneusly ferment and stay for the whole fining time until the wine is clear and stable.
Ageing
Aging in clay over the skins for 12 months.
