Barbaresco Crichët Pajé 2005 Roagna
Wine description
Roagna's Barbaresco Crichët Pajé represents the maximum expression of the wines produced by the winery and it revelas the absolute value of a wine in its complexity and longevity. The production of bottles is very limited, in some years less than 1000, up to a maximum of just over 2000. Each bottle is numbered. Even more rare are the large formats of one and a half liters, three liters and five liters.
Tasting Notes
Ruby red color with garnet reflections. Scent: elegant and complex, with notes of violets, red fruits, delicate tertiary, spicy and toasted nuances. Taste: intense and broad, with fruity, ethereal and tertiary aromas. Harmonious and velvety, it has soft tannins, a pleasant freshness and flavor. Very long and persistent finish.
Vinification
Crichet Pajé needs a long maturation, it leaves the cellar about 10 years after the vintage. The vineyard is harvested in October, normally in a morning, with perfect physiological maturation; the grapes are harvested manually and placed in small boxes. Before being vinified, the grapes follow two manual selections to check their perfect integrity. Fermentation takes place exclusively in wooden barrels with indigenous yeasts and lasts for about ten days. The ancient submerged cap splinting maceration technique is then applied, which lasts about three months (80-90 days).
Ageing
The wine ages in a neutral oak barrel.
