Tasting Notes
Color: intense ruby red. Scent: mineral, of plum, red fruit compote, leather, face powder, balsamic herbs and licorice. Taste: Austere, wide with an intense tannin, full-bodied, persistent spice and tasty. Explosive finish, with notes of violet and leather.
Vinification
Vineyard: "Colonnello" vineyard, in Bussia (Monforte d'Alba). The must stays in contact with the skins for 30 days. During this time the alcoholic fermentation gets fully complete. Controlled temperature, with highest peaks of 32°C and indigenous yeasts are used.
Ageing
The new wine is decanted several times before transfer to Slavonian oak casks where it is aged and refined for over 28 months.
