Wine description
The Castellada's Bianco della Castellada is a blend of white grapes, 50% Pinot Grigio, 30% Chardonnay and 20% Sauvignon. Full bodied rich in scents and intense, with great structure and character.
Tasting Notes
Golden color. It has interesting and complex aromas, including a floral broom, a tropical fruit, some vanilla nuances and a pleasant reference to aromatic herbs such as rosemary and thyme. In the mouth it is full-bodied, warm, soft and quite fresh. The persistence is long and modulated, and preserves all the organoleptic sensations to the last.
Vinification
Pinot Grigio is pressed and the must is left to ferment in barriques with indigenous yeasts. The Chardonnay and Sauvignon grapes ferment in contact with the skins for 4 days and then the must is decanted into barriques to complete the fermentation.
Ageing
11 months in barriques, 12 months in stainless steel vats and 12 months in bottles.
