Il Bianco From Black to White 2016 Zymè
Wine description
The Zymè's "Il Bianco From Black to White" is made with 60% Rondinella Bianca, 15% Gold Traminer, 15% Kerner, 10% Incrocio Manzoni. The name is related to a natural genetic mutation suffered by the Rondinella lives that has gone from being a red grapes to be a white grapes. Celestino Gaspari, owner and oenologist of the Zymé winery, decided to make his own wine after have been working for Giuseppe Quintarelli for 10 years. Il Bianco From Black to White is a wine that he likes to describe as: the wine that never was.
Tasting Notes
Color: bright yellow with greenish highlights. Scent: delicate notes of spring wildflowers, fruit, and country herbs. Intense notes of apple, pink grapefruit, mint, vanilla and elderflower Taste: elegant and perfectly balanced. Rich, complex, mineral with a good length.
Vinification
Harvest between the 2nd and 3rd decade in September Vinification and maturation: de-stemming and pressing, several hours of cryomaceration on the skins, gravity settling at 7-8°C, controlled fermentation in concrete vats for about 20 days.
Ageing
6 months on the lees, with weekly bâtonnage.
