Wine description
Noir by Paraschos winery is a red wine made from 100% Pinot Noir grapes grown since 2005. The vineyard is situated on the feet of Mount Sabotin (Friuli Venezia Giulia) with sensible alpine influence on a lucky spot of blue marl soil.
Tasting Notes
Color: right garnet red Scent: red currant and wild berries, notes of withered flowers, earthy aromas of humus, oriental spices, balsamic aroma from medicinal herbs. Taste: elegant and full-bodied, fresh with smooth softness, dense and delicate tannins, long balsamic finish.
Vinification
Spontaneous fermentation in small oak vat for 21 days with no refrigeration.
Ageing
Aging in small french oak tonneaux and barriques for 5 years on the fine lees. Bottling by free fall with no filtration and no additives.
