Wine description
From the multi-year commitment of Paraschos winery in the research and rediscovery of the original local growing and winemaking methods, they have achieved an obligatory stop: the true "white" from Gorizia (in Friuli Venezia Giulia): Friulano, Istrian Malvasia and Ribolla grapes harvested when fully ripe.
Tasting Notes
Color: gold yellow with orange shadows Scent: complex and aromatic sensations of jam of yellow fruits, wood spices, toasted touches and resin Taste: dynamic, rich and rustic, with toasted and tannic touches.
Vinification
Alcoholic fermentation in oak vats on the skins without forced cooling and without selected yeasts.
Ageing
Aging in large oak casks (15-25 hectoliters) for 30 months. Bottling by free fall without the addition of sulfur dioxide and without filtration.
