Wine description
A great expression of Mornington Peninsula Pinot Noir, Willow Creek's wine shows deep colour, with rich berry fruit aromas and spicy complexity. The flavour intensity, subtle texture and ample tannins will combine and produce greater richness and complexity over the next years.
Tasting Notes
Aromas of black cherry and red currant, with dried herb complexity and subtle floral and oak notes. The palate is intense and mouth-watering with cherries and spicy flavours at the forefront. The depth of fruit flavour is framed with silky tannin and mid-palate generosity balancing the natural acidity.
Vinification
The hand harvested fruit are mostly destemmed, fermented in small fermenters with gentle cap management to extract maximum colour and quality tannins from the skins and seeds. A small quantity (5%) was whole bunch fermented.
Ageing
Spending a total of 21 days on skins to build structure then pressed and transferred immediately to French oak barrels, 20% of which are new, the wine goes through malolactic fermentation then matures in barrel for 11 months prior to bottling.
