Kairos 2011 Zymè
Wine description
The Zymè's Kairos is a blend of 15 grape varieties, 4 whites and 11 reds (Garganega, Trebbiano toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino) coming from the vineyards of Zymé in the province of Verona and Vicenza. Celestino Gaspari, owner and oenologist of the Zymé winery, decided to make his own wine after have been working for Giuseppe Quintarelli for 10 years. Kairos is an absolutely unique wine, a mosaic of sensations and emotions that will develops during the years.
Tasting Notes
Color: ruby red, with garnet reflections Scent: a fine complexity of fruit, blossoms and earthy mineral notes Taste: rich and complex, with fruit and spices followed by tobacco, cinnamon, nutmeg and clove. On the palate it combines a good minerality with a great length and an a light sweetness.
Vinification
The grapes are harvested by hands based on the ripeness level of each grape variety. The clusters are placed on drying trays from 0 to 40 days. Vinification in steel and in concrete vats. Fermentation with ambient yeasts for 20-25 days.
Ageing
24 months without any racking in French oak barrels. And further a minimum of 1year in bottle.
