Wine description
The Le Marognole's Recioto della Valpolicella "CampoGerico" is made with Corvina e Corvinone 60%, Rondinella 30% e Croatina 10% grapes, grown in "CampoGerico" vineyard in Marano di Valpolicella. It's a dessert wine that can be paired with dry pastry, dark chocolate; but can also be enjoyed with some mature cheeses, or simply as a meditation wine.
Tasting Notes
Dark red-ruby color, with a slightly violet hue. Clean and harmonious, the nose has ripe fruit with hints of cherry in alcohol. The sweetness immediately envelops the palate, leaving room for a good acidity with notes of cherry jam and currant. Soft and warm finish.
Vinification
Recioto is produced with the grapes drying ancient method. At the end of September / beginning of October the best bunches are selected and placed in wooden boxes and put to rest with natural ventilation. After about 180 days the grapes will have lost about 50% of their original weight. Fermentation takes place at a controlled temperature, with the skins in contact with the must. With a gentle crushing, the wine is then drawn off still sweet, and filtered to block fermentation.
Ageing
12 months in 20HL French oak barrels.
